What is whey protein?

Whey protein concentrate (WPC) is the most commonly used protein supplement. The source of the protein in WPC is cow’s milk. When cow’s milk is processed by a dairy manufacturer to make cheese, the two main categories of proteins in the milk, casein and whey, are separated. The casein is used to make cheese, and the whey is used to make WPC. The first whey straight from the cheese production is a liquid containing the whey, but also a lot of lactose, fat, salt, and minerals. Through different steps of refinement, such as reverse osmosis and use of complex filtering technology, the water, most of the lactose, fat, and minerals are separated from the protein. The last step is a spray drying process and we end up with WPC powder with a protein concentration of 80%.
